Mama Scott has a philosophy about how she developed the gourmet sauces
that are loved by people throughout the nation. What is her secret for the
BBQ & hot sauce that is a leader in the world of gourmet sauces?   She shares.
“I have always depended on three things when I make my sauce: First,
Best ingredients, must be fresh, pure and original. Second, I use my recipes
that have been handed down.  Third, I love cooking with all six flavors,
I hope you’ll enjoy cooking also. 

Apple: sweet with real apples. Hot Apple:with Cayenne pepper. Mild: with no peppers.
Hot: with  Cayenne pepper. X-Picante:  Cayenne pepper & Chili pepper.
XX-Picante: Cayenne pepper, Chili pepper, Jalapenos & Habaneros.


QUICK TURKEY BURGERS
1-pound ground turkey meat
1 small onion
½ bell pepper
garlic clove
Sauté onion, bell pepper & garlic
Put in ground turkey meat and cook till done
Drain off juices
Pour in ½ cup of your choice of Mama Scott’s Sauce
Make patties and cook


BBQ BEANS
1 large can pork & beans
Chopped onion
½ bell pepper
½ cup brown sugar
1 lb. ground meat
Mix meat, onion, & pepper in Small pan; add to beans
1 cup of your choice of Mama Scott’s Sauce
salt & pepper to taste
Mix ingredients, cook in oven at 350 for 45 to 55 mins.


BAKED CHICKEN
1 chicken (cut up)
season to taste w/ salt, pepper, &
small onion
Bake at 400 for 1 hour
Drain off fat
Add ½ cup of your choice of Mama Scott’s Sauce
Bake in oven for about 15 mins.
Take out of oven and spoon sauce over the chicken
Serve with rice or mashed potatoes


SWEET & SPICY CHICKEN
1 chicken (cut up)
1 cup Mama Scott’s Hot Apple Sauce
Season to taste
Cook on grill until done
Place more sauce on chicken and serve


STEWED CHICKEN WINGS
3 lbs. chicken wings
1 medium onion diced
salt & pepper to taste
½ clove of garlic minced if desired
½ stick celery diced
Bake in oven at 350 for 1 hour
Drain off fat
Cover with ½ cup of your choice of Mama Scott’s Sauce
Bake for 15 mins. more
Serve


SHORT  RIBS
3 to 4 lbs beef short ribs
season with salt & pepper
1 small onion diced
Bake in oven at 350 for 1 ½ hours
Drain off fat and brush with of your choice of Mama Scott’s Sauce
Serve with rice or mashed potatoes


BEEF BURGERS
1 lb. ground beef or turkey meat
season with salt & pepper
Mix with ½ cup of your choice of Mama Scott’s Sauce
Make patties and grill


CHICKEN DELIGHT
2 broiler fryers split in half
dash of pepper
2 tsp. salt
2 cups of your choice of Mama Scott’s Sauce
2 tbsp. lemon juice
Brush chicken with salad oil
Cook on grill or bake until done
Drain off fat
Brush on your choice of Mama Scott’s Sauce
Serve


BAKED FISH
1 Large Fish (any kind)
season to taste
Brush on your choice of Mama Scott’s Sauce
Bake at 350 for 35 mins.


BBQ CHICKEN BREAST
4 Chicken Breasts
season to taste
grill for 30 mins. or bake for 45 mins.
Pour your choice of Mama Scott’s Sauce on Chicken
Serve with veggie


BEEF BRISKET
(4 TO 5 Lbs) Boneless beef brisket
trim excess fat
1 envelope dry onion soup mix
garlic powder and black pepper
2 cups of your choice of Mama Scott’s Sauce
2 cups beef bouillon

Rub both sides of brisket with garlic powder, black pepper and
Mama’s Sauce. Place in oven cooking bag; pour broth on beef;
seal bag. Make 6 slits in top and bake at 300 about 4 hrs.
After done remove from oven bag and brush with Mama’s Sauce
of your choice.      ** Makes about 12 servings**


Meat Loaf Best
2 eggs
¾ cup milk
½ cup fine dry bread crumbs
¼ cup chopped onion
1 1/2  pounds ground beef
1 cup of your choice of Mama’s Scott Sauce
1/8 teaspoon pepper
1 teaspoon dry mustard

Combine eggs * milk* crumbs* onions * salt * pepper
 and Mama Scott’s Sauce 
Add beef; mix well
Put mixture in a loaf pan. Bake for 1-1/2 hr.
Pour off excess fat. Brush on 1/2 cup Mama’s Sauce;
return to oven for 10 minutes more
Note: Substitute ground turkey meat for the beef.


Quick Steaks
(Your Favorite)
1 to 1/2 cup of your choice of Mama Scott’s Sauce
1 teaspoon salt * rub both sides of steak with Mama’s Sauce *
Place on grill or in oven broiler – until your desired doneness.


Snappy Meatballs
1 Lb. ground beef
¼ cup dry bread crumbs
1 teaspoon salt
1 small onion (chopped)
1 egg, slightly beaten
1 cup of your choice of Mama Scott’s Sauce


In medium bowl combine all ingredients except
Sauce; * mix well in skillet brown meatballs, in little oil 
turning occasionally * pour in the other 1/2 cup of sauce
and simmer 15 min.


CORNISH HENS
6 Cornish Hens (remove giblets)
salt & pepper to taste
2 cups of your choice of Mama Scott’s Sauce

Marinade hens in Mama Scott’s Sauce in plastic 
bag about 1 hr. ** place in baking pan and cover.
Bake in oven at 350 for 45 min. to 1 hr. basting at least once.


ROYAL RIBS
3 pounds meaty pork or beef ribs
soak in 1 cup of vinegar water
season with salt & pepper**
cook on hot grill till done** brush with
your choice of Mama Scott’s Sauce on both sides.

FINGER LICKING GOOD

JUMBO SHRIMP
1 cup your choice of Mama Scott’s Sauce
2 tablespoons lemon juice
Pour over shrimp ** let stand at least 3 hrs.
Cook shrimps on a fine wire grill over hot coals
6 to 8 mins or till done. ** Turning once & brushing
with sauce. DON’T OVER COOK; heat sauce & use 
with shrimp as a dip.

 


Lamb Rib-lets Appetizer
Lamb Rib-lets (cut up)
Season to taste
Boil Rib-lets until tender, then drain
Brush on  your choice of Mama’s Scott Sauce
Put on grill or bake in oven @ 350 degrees for 15 min


Lamb  Kabobs
2- pounds boneless lamb shoulder
cut in 1 1/2 in cubes
3- medium green peppers
1 – cup of  your choice of Mama’s Scott Sauce
Alternating lamb and green peppers run skewers
through pieces leave a little room between each
piece so meat can cook evenly. When done brush
both sides with  your choice of Mama’s Scott Sauce.
Alternate beef and lobster if you like.


Stuffed Green Peppers
1-lb ground beef
1/2- cup chopped onions
1/2- cup chopped celery
1/4 – cup chopped green peppers
1/2 – cup rice
1/2 – teaspoon salt   1/8 teaspoon pepper
1/2 – cup water
1- cup of  your choice of Mama’s Scott Sauce
4- large green peppers
8- oz can tomato sauce
1- teaspoon basil leaves
Parmesan cheese if desired

Cook rice** cook ground beef*  *drain juice** crumble
ground beef in bowl, mix in all ingredients with ground
beef** mix in only 1/2 cup of Mama’s Sauce in ground beef mixture.
Cut tops from peppers** remove membrane & seeds. place in 2-quart glass 
casserole dish. spoon in hamburger mixture, brush with remainder of 
Mama’s Sauce bake 20 to 30 min @ 350 degrees sprinkle with cheese.


Shrimp Soup
1- pound jumbo shrimp in the shell
      (peel and devein)
1- can condensed chicken gumbo soup
1- can 8 oz stewed tomatoes
1- jar 20 oz sliced pimientos drained
2- small onions (finely chopped)
1- cup water
1-cup cooked rice
1- teaspoon salt
1/2 teaspoon dried basil leaves
1- bay leaf 
1/4 cup of your choice of Mama Scott Sauce

In pan combine all ingredients Except Rice and shrimp**
shimmer for about 15 min add shrimp and cooked rice.
Cook for 10 min more or until shrimp is done.
